Adding `elasticpress` as a plugin dependency means this plugin cannot be used to debug VIP Enterprise Search

Describe the bug

#99 adds a dependency for the elasticpress plugin.

This plugin is otherwise generally functional for debugging https://docs.wpvip.com/enterprise-search/

Steps to Reproduce

1. Install this plugin at 3.1.0 on a VIP environment with Enterprise Search enabled.
2. Verify that the plugin works as intended.
3. Upgrade the plugin to 3.1.1
