Right now, we use LatitudeLongitudeGrid, but it would be preferred to use the TripolarGrid. This is used in the ClimaOcean "one-degree ocean simulation" example, which we can use as a template (see here).

Once we start using the TripolarGrid, it would be nice to support NetCDF diagnostics with the TripolarGrid. this will require changes in Oceananigans.jl - see CliMA/Oceananigans.jl#4844
