Simplify `add_space_coordinates_maybe!`

With the work done in #134, the add_space_coordinates_maybe! can massively simplified. In particular, there are only a handful of cases to handle such as lon-lat, x-y, lat-lon, and possibly the vertical space. To simplify this, you can use the holy trait design pattern.
