refactor: remove notebooks for slim PR

Keep slim branch focused on core pipeline (7 scripts, 1 job).
Notebooks can be re-added on separate feature branch with:
- Proper dependencies in pyproject.toml
- Plug-and-play setup (uv sync --extra notebooks)
