xarray-eopf 0.2.6 installs Zarr>3

@konstntokas despite the directives in the pyproject.toml, installing xarray-eopf 0.2.6 installs zarr>=3, breaking the compatibility with xcube-eopf. Could you check please?

Sorry @clausmichele I though I could easily upgrade to zarr v3 (which was easy for xarray-eopf), but is not easy for xcube-eopf. For now I downgrade, see #72 (already in main). Release is coming either today or latest tomorrow. I would like to finish changes in xcube-eopf and release them both together.

Pin your xarray-eopf version to 0.2.5 for now.
