[ Feature request ]: Standalone via proxy server support

The main reason I see to do this, beyond version compatibility, is that the velocity proxy allows you to use geyser, without having to individually package it. So we are trading off packaging one server for another, though we do gain version compatibility, so it mainly comes down to what is harder to package.

Though ViaProxy is a standalone server, I think it would make sense to have its options be put under a Minecraft server, since you would normally have one ViaProxy server for every Minecraft server. (There is an exception here of if the client is using it, but its configured differently, and you would manually start it, with its GUI).

The benefit of having it be under a Minecraft server is it can know what port the Minecraft server is listening on, so that would be put into ViaProxy's configuration automatically. Another advantage is we might want to put it in the directory of the server it is translating for, instead of having a separate server directory in the DataDir.

Though it could be run on a separate hardware from the Minecraft server, which would mean it would need to be configured as standalone instead of as an option on a server anyways, so this likely outweighs the advantages for having it be configured under an existing server. We could may have an option to tell it what server it is translating for under the standalone server, so it grabs all relevant information from that.
