What this PR does / why we need it:
This PR removes the defaults for postgres image, tag and repo which is a consequence of bitnami/containers#83267.
From now on users will have to provide these value by themselves or use an externally managed postgres instances (as described in the guide https://developer.konghq.com/gateway/install/kubernetes/on-prem/#postgres-database).
