Update mapping to account for new FOLIO inventory instance URI

New inventory administrative metadata field "Instance Source URI" will be released with FOLIO Trillium. We will need to update our mapping to move the URI from the electronic resource access field to the new inventory field. Testing of the new field is currently being assigned. More info here.
