Docs: exclude example not correct?

I think that `Exclude example` in docs at https://github.com/ZettaIO/restic-compose-backup/blob/master/docs/guide/configuration.rst?plain=1#L301-L319 is not correct. Or if it is, it doesn't make sense to me, sorry 😇
