Support overriding `ensureCorrectName` (e.g. support `LICENSE.md` instead of `LICENSE`)

Hey @titanism - I can understand the use case here. How would you like to see it implemented? Would you prefer something in the .copywrite.hcl config, or strictly a CLI flag?

Do you see it as a toggle, or do think there would be preference for being able to specify what the license file path/name should be? Just thinking through the ergonomics there.

I think having both CLI and config would be great, the CLI flag overriding config of course if present.
