Break up the repository `README.md`

I think it still is a bit lengthy, especially the plugins table
The more plugins we have, the more entries there will be, this is not sustainable

We haven't reached a decision on how to handle the growing amount of plugins yet

I'm leaving this issue open until we have a better solution~
