Allows adding callbacks to the tracking function
Should only be 1 callbackFn - will replace if overwritten. This is a simpler approach

Added based upon the issue I opened. Let me know if there's anything you'd like me to modify about it. Quite happy to make updates or changes since this is a great tool as it is already.
