Problem:
With Longhorn v1.10 in Harvester v1.7.0 we can now snapshot, clone and backup LHv2 volumes. The documentation needs to reflect this.
Solution:
This PR isn't quite right yet, because what I need to say here, somehow(!) is that you can backup and restore VMs with LHv2 volumes, provided those are additional volumes. If you're using LHv2 for the root disk / with images, then those use CDI, and AFAIK we can't yet backup CDI volumes. I just need to find a way of expressing this that isn't ridiculously confusing. Also I still need to check volume expansion support.
