chore: upgrade yellowstonegrpc to solana 3.0 compatible version

This PR upgrades the yellowstone-grpc dependencies to the latest v10.x.y series (e.g., ^10.0.0).

Motivation

• The Solana network is standardizing on Agave v3.0.7, which requires the solana-sdk v3.x.y series.
• The Yellowstone gRPC libraries have been updated to v10.x.y specifically to use and be compatible with the new solana-sdk v3.x.y dependencies.
• This update is required to maintain compatibility with the upgraded Yellowstone gRPC services and the new validator version.
