docs: drop stale thin_client/examples references#214

The examples/ directory was removed from the thin_client repo. Drop the side note that listed the deleted scripts, and point Verifying the stack at the Python integration suite instead.

The examples/ directory was removed from the thin_client repo; point readers to the integration suite under tests/ and the Thin Client How-to Guide instead. Update the Verifying the stack section to use pytest, with make run-ping mentioned as a lighter alternative.
