1. Upgrade dependencies to support Capacitor V3
2. Add interface [ScannerInputConfig, Config, ScannerOptions, BarcodeOptions, NfcOptions, CaptureOptions]
3. Update documentation

Tested this PR in android using Ionic/Capacitor. Current release (v0.5.0-beta.7) can't run on new application during my testing.

Will add interfaces soon. So that it will be easier for developers to follow formats when using executeScanner

maybe base your pull request directly to that branch? We have decided that each version will have its own branch
